The Victorinox / Forschner 5.2803.18 seven inch fillet knife has stiff blade and a slip resistant fibrox nylon handle. With a stiff blade the Forschner 40616 is ideal to use to remove bones from cuts of beef and pork. If wanting to remove bones from chicken and fish we recommend a fillet knife with a flexible blade.
